Here is my list, I hope you can add more (most of these deal with perfect play, streaks, etc). I realize most of the games aren't APable, but I just wanted to get a list of things that are hard to do, or rarely occur.
Tippin Bloks- stack all 9 without missing a blok
Big Bass Wheel- 3,000 ticket super jackpot
Deal or no Deal- pick jackpot case, decline final offer, win maximum tickets
Monster Hunt- collect all 11 monsters for 2,000 ticket jackpot
Chip Away- three acheivements here. First is to just figure out the maximum pattern for racking up your score at the end of a round. Most people who played this game only tried to clear chips as fast as possible. Second is to hit the jackpot, usually 500,000 points. Third is to reach round 20 (I don't think this round is beatable).
